 Lobster Salad

(from Legal Sea Foods Cookbook, by George Berkowitz and Jane Doerfer, 2001)

Here in New England we think that the best way to serve lobster is the simplest way. The delicate flavor of lobster needs to embellishment.

  • 6 cups cooked lobster mean (about 8 lbs. lobster in the shell)

  • 3/4 - 1 cup Easy Blender Mayonnaise

  • 1 cup diced chopped celery

  • Lemon juice (optional)

  • Salt (optional)

  • Boston lettuce

  • 3 hard-boiled eggs (optional)

Mix together the lobster, mayonnaise, and celery reserving the claws. Taste and season with lemon juice and salt if you wish. Mound on leaves of Boston lettuce on a large serving platter. Garnish with wedges of hard-boiled-eggs, and top with the reserved claws. (Serves 4 to 6).

VARIATION: Crab meat Salad. Substitute 2 pounds drained crab meat for the lobster, and add a dash of hot pepper sauce. Omit the eggs and garnish with scored cucumber slices.
